In November 2024, I had the opportunity to travel to China and teach for three weeks at our partner institution, the Shanghai Institute of Tourism (SIT). I was joined by my colleague, Chef Ritchie. My primary objective was to deliver a series of engaging, interactive lessons focused on Western-style baking and pastry techniques for SIT students.
Beyond the classroom, Trevor and I spent time connecting with SIT faculty, fostering strong professional relationships that continue to benefit both institutions. Upon our return, we collaborated on a detailed guide to assist future visiting faculty—highlighting useful insights and practical tips based on our experience.
This journey was incredibly enriching on multiple levels. I made a conscious effort to explore the local cuisine, sampling a wide variety of traditional dishes and regional pastries, and gaining a deeper understanding of Chinese ingredients and culinary approaches.
As an educator who works closely with international students, this immersive experience has deepened my appreciation for the cultural and academic challenges these students may face while studying abroad. It has also enhanced my perspective and informed my teaching practices, allowing me to support and connect with my students more effectively.
